Today August 10th 2021 is National S’mores day and what better way to celebrate than with one of my favorite recipes! Growing up in Michigan s’mores were an essential part of the summertime. Over the years I have fallen in love with different ways to make s’mores and still get the original taste. I have always loved adding chocolate and peanut butter together and when deciding how to update this recipe i’ve had for years I knew peanut butter was the perfect fit. It adds something special to the traditional s’mores taste.
INGREDIENTS I used to make these peanut butter oatmeal s’mores bars:
Items I used to make:
Crust:
1 Cup flour
1 cup oats
½ cup brown sugar
½ tsp baking soda
Pinch of salt
½ cup unsalted butter softened
1 tsp vanilla
Middle:
1 cup of semi sweet chocolate chips
½ cup of peanut butter chips
1 cup marshmallows
Topping:
⅓ cup brown sugar
⅓ cup unsalted butter
¾ cup oats
⅓ cup flour
To add last:
¼ cup semi sweet chocolate chips
¼ cup peanut butter chips
¼ cup mini marshmallows
½ cup of melted peanut butter
Crust:
1st: Preheat the oven to 350 degrees. Line 8×8 baking pan with parchment paper
2nd: In a mixing bowl or Kitchenaid mixer, combine all ingredients for the crust. Pack dough into an 8×8 baking pan.
3rd: Cook for 8-10 minutes or until lightly browned
4th: sprinkle semi sweet chocolate chips, peanut butter chips and mini marshmallows from the middle ingredients while it sits
Topping:
1st: Mix together brown sugar and butter. Stir in oats and flour.
2nd: Displace the dough over the pan. Make sure it covers most of the pan and sprinkle crushed graham crackers on the top.
3rd: Place in oven for 6 minutes
4th: Remove from oven and add more chocolate chips, peanut butter chips and mini marshmallows.
5th: Place in over until marshmallows get golden brown or another 6 minutes.
6th: Remove from the oven, drizzle melted peanut butter on top and let cool. Then enjoy it with a big glass of oat milk!
